Spicy Avocado and Tomato Soup

This is a really quick, filling soup. Perfect for lunch!   1 avocado 1 tomato 1 tablespoon virgin coconut oil 1 tablespoon miso (unpasteurized, I used yellow) 1 teaspoon fresh ginger 1/4 teaspoon minced garlic Pinch of nutritional yeast Pinch of smoked paprika Put everything in your Vitamix and blend until smooth. Easy peasy salad breezy

Okay, so this salad has no peas in it, but it sure is easy! The great thing about salad is it’s a great light lunch or a quick dinner and there are so many varieties. I had some pears and dried cranberries around, which was pretty much it. Turns out the sweet and tangy really went well with the peppery, nutty taste of the dressing. Coconut milk

I love coconut milk, but I don’t love the prices that you find at the grocery. This is a very easy raw milk to make that you can add to a raw cereal or have on its own. All you need is 1 cup shredded coconut (sweetened or no) 2 cups water Blend in your Vitamix on high until desired consistency is reached. When you are finished it is best to strain through a nut bag and then serve immediately or chilled. Keeps in fridge for 3 days. Shake well before each use.  Read More
