Okay, so this salad has no peas in it, but it sure is easy! The great thing about salad is it’s a great light lunch or a quick dinner and there are so many varieties. I had some pears and dried cranberries around, which was pretty much it. Turns out the sweet and tangy really went well with the peppery, nutty taste of the dressing. I like my dressings pretty thick, so feel free to add more water to thin it down.
For salad dressing:
2 cups pumpkin seeds (soaked for 2 hours)
2 teaspoons fresh ginger
1 tsp fresh oregano
good pinch of cayenne to taste
Braggs Amino taste ( this is very strong, so use a very little splash and go from there)
4 minced scallions
Add it all to your Vitamix and blend together with enough water to thin and make a smooth dressing.
For my salad I used one pear thinly sliced and 1/4 cup dried cranberries with mixed greens. Yum!
