Happy June! Avocados are so good right now, I can’t help but eat them in everything. This one I just threw in some random things from around the kitchen and found that the apple added a great light freshness to the drink. 1 avocado, pitted and removed from skin 1 cup coconut milk  1 inch cube of peeled ginger, but you can use more or less to taste 1 apple (I used Pink Lady, which is crisp, sweet, and tart.) Juice of 1 lime Throw it all into... Read More

Thai Curry Soup

soupreadytoeat

Raw soup is one of my favorite things to make and they are great for all year long. Chilled soups in the summer are very refreshing and letting the soup blend just a little longer will heat it up just enough to warm you up in winter. The variety is endless and it’s a quick dinner fix. This one I adapted from Matt Amsden’s RAWvolution recipe Siamese Dream, Thai Curry Soup. 3 cups coconut water (I used O.N.E. One Natural Experience) 3 cloves... Read More

Easy peasy salad breezy

Okay, so this salad has no peas in it, but it sure is easy! The great thing about salad is it’s a great light lunch or a quick dinner and there are so many varieties. I had some pears and dried cranberries around, which was pretty much it. Turns out the sweet and tangy really went well with the peppery, nutty taste of the dressing. I like my dressings pretty thick, so feel free to add more water to thin it down. For salad dressing 2 cups pumpkin... Read More
