It’s finally Spring! Here’s a great way to celebrate, using in-season California avocados. This avocado and basil smoothie is a healthy start to the new season, and surprisingly refreshing!
1 ripe avocado, halved and pitted
1 1/4 coconut milk
1 1/2 tablespoons fresh lime juice (about 1 lime)
1 tablespoon agave syrup
1 table spoon fresh basil, plus some extra for garnish
1 cup ice
Scoop the avocado flesh into your Vitamix blender, then add the coconut milk, lime juice, agave syrup, and basil. Blend until smooth. Add ice, and blend until smooth again.
