Happy June! Avocados are so good right now, I can’t help but eat them in everything. For this one I just threw in some random things from around the kitchen and found that the apple added a great, light freshness to the drink.
1 avocado, pitted and removed from skin
1 cup coconut milk
1 inch cube of peeled ginger, but you can use more or less to taste
1 apple (I used Pink Lady, which is crisp, sweet, and tart.)
Juice of 1 lime
Throw it all into your Vitamix and blend until smooth. You could add agave nectar, if desired. I found the Pink Lady apples to add the perfect amount of crisp sweetness. The apple peel also leaves pink flecks through out the smoothie, which makes it pretty cute!
