This is a really quick, filling soup. Perfect for lunch!
1 tablespoon virgin coconut oil
1 tablespoon miso (unpasteurized, I used yellow)
1 teaspoon fresh ginger
1/4 teaspoon minced garlic
Pinch of nutritional yeast
Pinch of smoked paprika
Put everything in your Vitamix and blend until smooth. Sprinkle with the nutritional yeast and smoked paprika. It will keep for a couple of days in the fridge.
